We recommend going up +1 in the Sun-San range and +1 in the Adult Salt-Water Original (Adult Start at 4UK / 5US /37 EU )
With the children's Salt-Water original, it is usual to purchase "like for like" e.g. if your child is a UK size 8, then a Salt-Water size 8 should be fine.
If they are in between sizes you may find the size below is still roomy enough e.g a UK 7.5 would be okay in a Salt-Water 7

They shouldn't be purposefully bought larger in order to make the sandal "last longer" as the traditional fit of this brand is pretty roomy.
With any of the sandals, should you get a sore spot, dunk your foot in water and wear them wet (yes really!)
Remember, every model can be used as a swimming shoe and can be put through the washing machine on gentle cold wash.
